This emerging field suggests that the internal biological clock plays a pivotal role in how the body metabolizes food and converts it into energy, directly impacting overall health.

Eating patterns differ significantly across cultures, with experts arguing that Spanish habits may be more aligned with human biology than modern Western practices. While residents of the UK and the US tend to have a light lunch followed by a heavy dinner, it is common in Spain to consume lunch as the largest meal of the day.

Javier Hirschfeld, the Spanish researcher, states that the proverb "Eat breakfast like a king, lunch like a prince, and dinner like a pauper" was ingrained in his awareness since childhood, reflecting deep dietary wisdom. Hirschfeld clarifies that many in Spain limit themselves to a very light evening meal, such as fruit or yogurt, or skip it entirely, thereby reducing the burden on the digestive system at night.

Scientists believe that reversing this pattern, i.e., making dinner the primary source of calories, may contribute to an increased risk of obesity and cardiovascular diseases. This disparity in habits drives researchers to study the impact of meal timing on the body's biochemical processes with great precision.

Scientific Evidence on Meal Timing Importance

Scientific interest in this field began when Dr. Marta Garaulet from the University of Murcia in Spain noticed a puzzling contradiction in weight loss treatment results between two patients living in the same home. They consumed the same foods and followed the same diet, but one had lunch at one o'clock in the afternoon while the other delayed it due to her university schedule.

Results showed that the patient who ate her main meal earlier lost significantly more weight over six weeks compared to her peer who ate late, prompting Garaulet to suspect the role of timing itself. To confirm this hypothesis, Garaulet led a study involving 420 adults who underwent a uniform weight loss program for twenty weeks.

The experiment proved that participants who had lunch earlier lost weight faster than those who delayed the main meal, confirming the circadian rhythm's effect on fat burning. In another trial involving thirty healthy women, it was found that those who delayed lunch had poorer control over blood sugar levels and reduced carbohydrate burning.

Dr. Frank Scheer, a neuroscientist at Brigham and Women's Hospital, explains that the reason lies in the fact that "we are not the same person biologically in the morning and evening," as the internal clock regulates all physiological functions. The mismatch between late eating times and sleep speed is known as "circadian misalignment," which hinders the body's ability to process glucose efficiently.

A 2022 study proved that consuming a glucose drink one hour before bedtime led to a sharp rise in blood sugar and a decrease in insulin secretion compared to consumption four hours prior. This effect is partially attributed to the rise of the melatonin hormone as sleep approaches, which hampers the effectiveness of sugar-regulating hormones, confirming the necessity of aligning our meals with our natural biological rhythms.
